Moo Kata, often written Mu Kratha, is essentially a combination of hot pot and BBQ. You can select the raw ingredients and use a tabletop grill to prepare them yourself.

Traditionally, a tabletop grill consists of an elevated dome for cooking meats and a surrounding area for cooking broth- cooked veggies, fish balls, and mushrooms.Typically, the broth is mildly flavored and the cut meat is already marinated, so all you really need to do is throw everything into the pan and let it simmer. Condiments, such as a variety of sweet, hot, and garlicky dipping sauces, finish the meal.[1]

Characteristic[edit]

The most distinctive feature of Moo kata is that, in contrast to other BBQ restaurants where the skillets are cooked by gas or electricity, it is run like a traditional Thai restaurant, therefore the heat source is charcoal. It's because food cooked over charcoal will have a richer, more nuanced flavor that is complemented by a hint of smokiness.

To keep food from sticking when cooking Moo kata, a piece of fat is usually fried at the top of the pan.[2]

Origin of Mu Krata[edit]

In Thai, "Moo kata" literally translates as "pork-pan / pork skillet," where "Moo" stands for pork and "kata" for skillet. It seems that Chiang Mai is where the food known as "Moo kata" originated. It have emerged in Thailand in the latter half of the 20th century, becoming well-known especially in Bangkok before finally expanding to other areas. The cooking process is setting a dome-shaped grill over a pot of soup so that guests can grill different kinds of meat, seafood, and vegetables while the soup cooks them. Moo kata is a popular practice in Thai cuisine because it offers a communal eating experience when friends and family members get together around the grill to cook, eat, and chat.[3]

Although it still has a strong Thai culinary foundation, it has also absorbed flavors and ingredients from nearby nations, like as Laos and Cambodia.
